Job Summary:
We?re seeking an experienced Sous Chef (Head Chef-in-Training) to help lead our kitchen team with creativity, precision, and a strong foundation in Western cooking techniques.
You?ll work side-by-side with a seasoned Executive Chef from Mexico, who brings decades of experience opening and developing Mexican restaurants across international markets. This is a rare opportunity to learn the craft of authentic Mexican cuisine ? from the roots of traditional dishes to modern techniques, plating, and kitchen leadership.
You?ll play a key role in the launch phase of the restaurant, helping to build the kitchen team, establish systems, and set the culinary standards. Once the restaurant is up and running, you?ll step into the Head Chef role, taking full ownership of kitchen operations and overall culinary direction. You?ll oversee daily service, mentor cooks and junior staff, and ensure every dish meets the standards set during development. This is a hands-on leadership position, where you?ll bring the Executive Chef?s vision to life and help shape the long-term identity of the restaurant.
What You?ll Do:
? Work closely with the Executive Chef to master the foundations and nuances of authentic Mexican cuisine.
? Help develop and refine dishes, recipe systems, prep processes, and service flow.
? Lead the kitchen in daily operations ? from mise en place and execution to plating and quality control.
? Mentor and train a small, efficient team of cooks and junior staff.
? Collaborate on seasonal specials, creative menu development, and ongoing refinement.
? Ensure consistency, precision, and excellence in every dish served.
? Maintain high standards in kitchen hygiene, safety, organization, and professionalism.
