Culinary degree or equivalent professional experience in a high-quality kitchen.
Previous experience working in a pizzeria or Italian restaurant.
Familiarity with wood-fired pizza ovens or other specialized pizza cooking equipment.
Knowledge of dietary restrictions and special requests, such as gluten-free or vegan pizzas.
Pizza Preparation and Cooking:
Prepare pizza dough, sauces, and toppings according to recipes, ensuring consistency in texture, flavor, and quality.
Cook pizzas to perfection using a wood-fired oven or standard pizza oven, ensuring even cooking and perfect crust.
Ensure all pizzas are prepared and cooked to order, meeting the restaurant?s standards for portion sizes, toppings, and presentation.
Station Management:
Take full responsibility for the pizza section of the kitchen, including maintaining stock levels, ensuring availability of ingredients, and keeping the section organized.
Ensure that all kitchen tools and equipment used for pizza preparation are in good working order and regularly maintained.
Monitor the cleanliness and organization of the pizza station, following health and safety regulations at all times.
Collaboration and Communication:
Work closely with other kitchen staff and chefs to ensure smooth operations and timely delivery of pizzas to the front-of-house team.
Communicate effectively with the front-of-house team to ensure orders are completed correctly and promptly.
Assist in training junior kitchen staff, including commis chefs, on pizza preparation techniques and kitchen operations.
Quality Control and Consistency:
Ensure pizzas are prepared, cooked, and presented consistently to the restaurant?s high standards.
Regularly check the quality of ingredients, such as cheese, vegetables, and meats, to ensure freshness and minimize waste.
Ensure portion control is maintained for dough, toppings, and sauces.
Health and Safety Compliance:
Follow all food safety and sanitation practices to ensure proper handling, cooking, and storage of ingredients.
Maintain a clean and safe workspace, ensuring all kitchen tools and surfaces are sanitized regularly.
Adhere to health and safety regulations related to the pizza oven, including safe handling and operation.
Menu Development and Innovation:
Collaborate with the head chef or sous chef to develop new pizza recipes, topping combinations, and seasonal specials.
Stay current with pizza trends, and create innovative, high-quality pizzas that complement the restaurant?s overall menu.
Incorporate local, seasonal ingredients into pizzas to offer unique options to customers.
Operational Efficiency:
Work efficiently, especially during peak hours, to ensure pizzas are prepared and cooked in a timely manner without compromising quality.
Ensure pizza orders are prioritized and delivered promptly, keeping customers satisfied with fast and consistent service.
Manage stock levels for pizza ingredients and notify management when ingredients need to be replenished.
