Culinary degree or equivalent professional experience in a high-quality kitchen.
Previous experience working in a tapas-focused restaurant or with Mediterranean cuisine.
Knowledge of dietary restrictions and special requests (e.g., vegetarian, gluten-free tapas).
Ability to create and introduce innovative dishes while respecting traditional Spanish flavors and techniques.
Food Preparation and Cooking:
Prepare and cook a variety of tapas dishes, including both hot and cold plates, following recipes and restaurant standards.
Ensure all ingredients used in tapas dishes are fresh, and properly stored, and are of the highest quality.
Follow the portion control guidelines to ensure consistency in taste, presentation, and cost.
Station Management:
Take full responsibility for the tapas section of the kitchen, including inventory control, ordering, and ensuring the availability of all required ingredients.
Keep the tapas station clean, organized, and in compliance with health and safety regulations.
Ensure all kitchen tools and equipment required for tapas preparation are maintained and in good working order.
Collaboration and Communication:
Work closely with other chefs and kitchen staff to ensure smooth operations during service.
Coordinate with the front-of-house team to ensure tapas dishes are served promptly and correctly.
Assist in training and mentoring junior kitchen staff and commis chefs working in the tapas section.
Quality Control and Consistency:
Ensure each dish is cooked to the highest standard, consistently meeting the restaurant?s quality expectations.
Maintain consistency in portion sizes, flavors, and presentation of tapas dishes.
Regularly check the quality of ingredients to ensure freshness and minimize waste.
Health and Safety Compliance:
Adhere to food safety and hygiene standards, ensuring proper handling, cooking, and storage of ingredients.
Maintain a clean and safe work environment, following all relevant health and safety regulations.
Ensure that the tapas section remains organized, and all tools and equipment are sanitized regularly.
Menu Development and Innovation:
Collaborate with the head chef or sous chef in the development of new tapas dishes and seasonal specials.
Stay current with trends in Spanish cuisine and introduce innovative tapas ideas that enhance the menu.
Assist in incorporating local, seasonal ingredients into tapas dishes when appropriate.
Operational Efficiency:
Work efficiently to ensure tapas dishes are prepared in a timely manner without compromising quality.
Monitor the pace of service, ensuring that tapas dishes are sent out promptly to maintain excellent customer satisfaction.
Manage stock levels for the tapas section and alert management when supplies need to be replenished.
