คุณสมบัติ

Qualifications:

- Education: Bachelor?s degree in Food Science, Microbiology, Quality Assurance, or related field.
- Experience: Minimum 3 years of experience in quality control or quality assurance within the bakery, pastry, or food production industry, with experience in an artisan production environment preferred.
- Certifications: HACCP, GMP, or similar food safety certifications are highly desirable.

Skills:
- Strong knowledge of local and international food safety regulations and quality control systems.
- Excellent analytical and problem-solving skills.
- Strong communication skills, particularly when dealing with high-end clients.
- Proficiency in English, especially for client communication and reporting is a must.
- Ability to work under pressure and manage multiple tasks simultaneously.
- Leadership skills, with the ability to train and motivate teams on quality-related processes.

Working Conditions:

- The role is primarily based in the production unit, with time spent on the production floor monitoring processes.
- Occasional interaction with clients and suppliers, including site visits, may be required.
- Flexibility with working hours, especially during peak production times or in response to client demands.

Job Summary:

The Food Production Quality Control Manager is responsible for overseeing and maintaining the highest standards of quality across all stages of pastry and bakery production.

Working in an artisan production environment, this role ensures that products meet the expectations of discerning, high-end clientele.

The Quality Control Manager will develop and implement quality control protocols, supervise the quality inspection process, and collaborate closely with production and management teams to ensure the consistent delivery of premium products.

Key Responsibilities:

1.Quality Assurance Strategy:
- Develop, implement, and manage quality assurance systems and protocols tailored to artisan production processes.
- Ensure compliance with local and international food safety standards (e.g., HACCP, Thai FDA, GMP) relevant to the production of bakery and pastry products.

2.Product Inspection and Testing:
- Monitor raw materials, production processes, and final products to ensure consistent quality and adherence to specifications.
- Perform regular sensory evaluations (taste, texture, appearance) and ensure product consistency across all batches.
- Oversee and perform microbial, allergen, and foreign body testing, ensuring results are within safe limits.

3.Process Control:
- Monitor critical control points (CCPs) in production to prevent contamination or production errors.
- Collaborate with the production team to identify, correct, and prevent deviations in processes that may affect product quality.
- Ensure all equipment is regularly cleaned, maintained, and calibrated to meet hygiene standards.

4.Client-Specific Quality Standards:
- Understand and implement quality specifications based on the unique demands of high-end clients.
- Communicate with clients as necessary to confirm their expectations, gather feedback, and ensure ongoing satisfaction with product quality.

5.Team Training and Development:
- Provide ongoing training to production staff on quality control procedures, hygiene, and food safety practices.
- Ensure that all team members understand the importance of quality and the impact on brand reputation, especially when catering to luxury clientele.

6.Audit and Compliance:
- Conduct internal audits and inspections to ensure compliance with both internal standards and external regulatory requirements.
- Prepare for and manage external audits and certifications required by high-end clients or regulatory bodies.

7.Documentation and Reporting:
- Maintain accurate records of quality control tests, inspections, and corrective actions.
- Prepare and submit regular quality assurance reports to management, detailing production quality trends and areas for improvement.

8.Supplier and Ingredient Control:
- Work closely with suppliers to ensure all raw materials meet quality and safety standards.
- Conduct periodic supplier audits to ensure ingredients are sourced in compliance with high-end client expectations.

9.Problem-Solving and Continuous Improvement:
- Investigate and resolve any quality-related issues in production, identifying root causes and implementing corrective actions.
- Continuously review and improve quality control processes to enhance overall product quality.

10.Client Communication:
- Provide direct communication and reports to clients regarding quality assurance actions, particularly during critical or sensitive issues related to product safety and quality.
- Manage client feedback and implement adjustments as necessary.

1. Salary Range:
Entry-Level (3-5 years of experience): THB 60,000 - THB 90,000 per month
The salary range depends on the candidate's experience, certifications (e.g., HACCP, GMP), and English proficiency, which is especially important for communication with international or high-end clients.
